As the leaves turn golden and the air grows crisper, there’s nothing like a warm, hearty soup to welcome the changing season. The boys love helping me out with this recipe and are quick to request it weekly once September ends. Here are the ingredients we whip up to make our delicious Fall Harvest Soup that’s bound to become a family favourite.
Ingredients:
- 500g ground beef
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 3 large carrots, peeled and sliced
- 3 cups chicken broth
- 1 cup water
- Olive Oil
- Salt and pepper to taste
Instructions:
Step 1: Prepping the Ingredients
- While I gathered the ingredients for our soup, Chris and Theo immediately get busy, they love to assist with peeling and chopping, so they place a wrap on “their stations and grab a knife/peeler to get to work. I love that we turn this kitchen session into a fun family bonding time.
- Today, Theo peeled and chopped the carrot while Chris was on potatoes duty.
Step 2: Adding the Hearty Vegetables
- I handle the garlic grating and onions cutting and grab a pot for our dinner. Putting in the olive oil and salt, I start to simmer. With the aromatic base of garlic and onions adding in soften up, I add the chicken broth to boil, and then Chris is ready to toss in the diced potatoes for boiling. At this point, the pot for our fall harvest soup begins to smell great, and Chris starts bouncing on his heels for the next steps.
Step 3: MeatBalls of Perfection
- Chris works on the ground beef and adds in salt, pepper, egg and a bit of boiled rice and mixes it together. He then forms balls and he places them on the counter top. Theo sets the timer for 15 minutes and cleans up his work station.
Step 4: Letting the Magic Happen
- The kitchen fills with the delightful scent of our now simmering fall harvest soup, and once the timer is up, Chris adds in the meat balls and patiently wait for the meatballs to cook and Theo sets another 12 minutes timer and I add 1 cup of water to the mix. We like to have crunchy carrots so it’s always our last step so it doesn’t become too tender. This is when the true magic of a good soup comes to life.
Step 5: Seasoning and Serving
- As the carrots reach their perfect tenderness, Chris and Theo take turns tasting and seasoning the soup with salt and pepper, ensuring it’s just right.
Step 6: A Family Feast
- With the final taste test complete, I ladle the steaming soup into bowls and the boys sets the table. The family gathers around the table, eager to savour the fruits of their labour.
Cooking together as a family creates bonds and memories that last a lifetime. This Fall Harvest Soup, was aptly named by Theo as the Richard’s Fall Soup which Chris is still trying to have us change the name to Fox Fall Soup ( Theo has refused to accept this). They banter jokingly is a testament to shared kitchen experiences’ power, cos they are in good spirit laughing together.
